酒造りの現場

When possible, we visit the sake brewery to meet the brewers in person and to experience for ourselves the brewing environment. By doing this, we gain a deeper appreciation for the care and unique techniques involved in the brewing process, and we are in turn able to select and serve our sakes with greater confidence. We strive to hold our sake tastings so we can explain from not only book knowledge, but from personal experience.

The sake always plays the lead role at Chagohan Tokyo. We do not select sakes to compliment our appetizers, but rather create appetizers to compliment the sakes.

The owners’ hands-on approach is their work ethic, and it is our sincere hope it reflects itself in our shop.

 

出来る限り酒蔵へ足を運び酒造りの現場を生で感じ、蔵元さんと直接顔を合わせる機会をどこかで作り、その想いやこだわりを実際に味わうことでより確かな情報と味への確信を持って酒を選ぶ。こうした自身の体験を持って伝える唎酒体験を開催し、酒バーでは酒菜に合った酒ではなく、その酒に合った酒菜を提供していく。

そう、主役は「酒」たちです。

これがオーナーのスタイルでありライフワークでもある。
